salmon patties

a very fast family favourite...

boil 4 large potatoes
roughly mash, add 1 diced onion, 1/2 bunch corriander
1 can red or pink salmon with skin and bones removed
add 1/4 cup chopped capers, 1/4 cup lemon juice
2 eggs, salt pepper.
Roll in fresh bread crumbs and fry in shallow olive oil.
serve with green salad, yoghurt and lemon wedges

  1. Had a lovely salmon pattie dinner tonight. Mixture turned out a bit too moist so I ended up using the crumbs to bind instead of coat. Still nice, light and great tasting.

    P.S I think you're being a bit skimpy on the salmon

  2. thats because there is 9 of us to feed.If you have more money than us add 2 cans. lol must be those dodgy Canadian potatoes... not too wet here in OZ
