Janelles Economical Spaghetti sauce 2 ways


I make this when I have to feed a crowd or want a spare meal in the fridge : We had it last night when the kids had friends over , nothing better than yummy pasta, great teenagers and God at the dinner table with us all.
This will feed 8 then there is enough left over for the second dish;

500g mince beef
1 lge zucchini
2 carrots
2 sticks celery
2 garlic
2 onions
fresh herbs
2 cans diced tomatoes
1 jar pasta sauce
1 can tomato puree
1 cup white wine
1/4 cup milk
salt, pepper
water

Put all vegetables and herbs in a food processor and mice up; Fry in a heavy based pot in olive oil; add meat; fry up till all meat is brown; Add milk ( this stops the acid from the tomatoes making your sauce bitey ) add wine ; Add all other ingredients; simmer for 1 1/2 hours, the key is the milk and the slow simmer.
Serve with pasta.
You will have half the sauce left which you will then refrigerate, when it is cold you can make my Cannelloni.

EASY CANNELLONI
1 pct cannelloni tubes
left over spaghetti sauce
200g spinach
500ml bechamel sauce; see below
1 tab butter
1 tab plain flour
salt, pepper
500 ml milk
1 egg
1/4 cup Parmesan cheese
Melt butter, add flour, add milk until thickened; turn off heat add cheese and beaten egg.
1/2 cup mozzarella cheese

Fill cannelloni tubes with spaghetti sauce; lay flat in dish, Pour over 1/4 cup water top with spinach; Top with bechamel sauce;
Sprinkle Parmesan and mozzarella cheese on top, Bake for 35 min
