30 minute dinner

Chicken patties.
Place 1 onion, 1 garlic , 1 carrot, 1 zucchini, 2 eggs, salt and pepper, fresh herbs , 1 tab rice flour
in a food processor . Chop, add 700g chicken mince fillets.
Remove mix from processor, add 7 slices white bread, make crumbs.
Roll chicken mix in crumbs, fry in shallow olive oil, place in oven for 20 min.
Serve with salad. yum yum!! Kids loved it

  1. I thought they were a bit mushy as I dunked them in the breadcrumbs, but the frying holds together nicely and I underdid the salt but they are great just the same. I used a little sage, a bit of rosemary and fair bit of parsley but i reckon they'd be nice with basil too. Thanks Nellie - we have 2 left.Sondy
